I enjoy a variety of cheeses including the following:

- Brie
- Camembert
- Cheddar
- Cheshire
- Dutch Edam
- Danish Blue
- Emmental
- Feta
- Red Leicester
- Stilton

best has to be a mature sharp cheddar for me
also manchego, padano, brie, fresh mozzarella are nice.

Feta or Anything pungent with mold in it can do one. Makes me gag.

One very interesting cheese that is apparently available in Waitrose is Baldauf Wild Flower. It is apparently German but I came across it in Val Gardena, Italy where, as the non-skier in the family, I was enjoying myself cooking and tucking into the local fare. I noticed the attractive flower petal coating in the deli, bought a bit, tried it and gave it up as sweet, bland and just wrong. Three days later, I put it on the table and lo! it was excellent - tangy, crunchy and creamy at the same time. It had undergone some kind of alchemic transformation in the fridge and was the find of the holiday (apart from my wine favourite, the very estimable local St. Magdalener).

I know this may not be a popular choice but Humboldt Fog from California is the mutt's nuts. Another great American cheese is Maytag Blue from Iowa

This is my subject. Fourme d'Ambert from the Auvergne region (the farm-made variety, not its factory imitation) is as good as cheese gets.

I am very partial to a cheese and ham croissant and Gruyere.is best for that.

Make them, wrap in foil and in the oven for 20 mins at 160. thank me later.

Gruyere is also a must for on top of Dauphinoise.
